DOST holds symposium on Basic Taste, UMAMI

Davao City (15 August) -- The Food and Nutrition Research Institute (FNRI) in coordination with the Department of Science and Technology (DOST) regional office will hold a symposium dubbed as "the 5th Basic Taste, UMAMI" to be held on August 29, 2008 at 8:00am at the Marco Polo plaza, Davao City.
DOST OIC Eduardo Tesorero said the symposium, first held in Makati in January and second in Cebu in May this year, aims to develop a common and in-depth understanding of "UMAMI as the 5th basic taste" from the technical, scientific, and layman's point of view.
About 100 participants are expected to attend the symposium coming from Southeastern Mindanao which will consist of selected experts in the fields of culinary arts, health and nutrition, food technology, hotel and restaurant business, food industry and the media.
Topics to be discussed include: Umami, a universal taste by Dr. Josefa Eusebio of the Philippine Umami Information Center; The Biochemistry and Physiology of the Umami Taste by Dr. Nemencio Nicodemus, Jr. of the Department of Biochemistry and Molecular Biology, College of Medicine, UP;
Umami in a global pot by Ms. Nancy Reyes-Lumen, a culinary specialist; Review of Updated Research and Regulations on Glutamates by Dr. Lara Alentajan-Aleta, Clinical Association Professor & Section head, Allergy & Immunology lab, Dept. of Medicine, UP-PGH Medical center;
Consumption of Glutamate-Rich Foods in the Philippines by Dr. Mario Capanzana, project leader; and a discussion forum to be led by Mrs. Celeste Tanchoco, Scientist 111 & chief Science Research Specialist, FNRI-DOST.
